Origin Story

The Aguilera Family, also known as the "Hermanos Aguilera," has been growing coffee for over 60 years and transitioned into specialty coffee production more than 15 years ago. The family has earned consistent recognition in the prestigious Cup of Excellence competitions, thanks to their focus on producing unique coffee varieties and experimental processes.

Los Robles is a blend from three of the family's farms, combining Villa Sarchi and Sarchimor varietals grown at 1500 metres above sea level.

Dylan Aguilera, who founded Aguilera Coffee Traders in 2022, represents the third generation of his family's coffee expertise. In 2023, he earned the title of Costa Rican Cup Tasting Champion.

The Process

The washed process involves removing the coffee bean from the cherry's fruit layers before drying, resulting in a clean, bright, and acidic cup profile. Key steps include harvesting & sorting, depulping (removing skin/pulp), fermenting in water tanks for 12-72 hrs to break down sticky mucilage, thorough washing, and finally drying on patios or beds.
